[candice] so in our thing, blablabla
[candice] today on The EdgyVeg, i'm going to show you how to make
[candice] a VEGAN CARROT CAKE with CREAM CHEESE FROSTING.
[candice] for easter!!!
[candice] yayyy!
[candice] the first part of our carrot cake that we are going to make is actually the carrot cake part of the cake.
[candice] this isn't a gluten free cake because i'm not a gluten free baker, i'm a normal baker.
[candice] just happens to bake vegan. actually i'm not a baker at all, i hate baking.
[candice] so in our mixer, you can also do this in a bowl with a whisk.
[candice] or if you have one of those hand mixers, those electric hand mixers,
[candice] cos i have a stand mixer, so i'm going to do this in there.
[candice] first thing we are going to do is mix in our sugar,
[candice] with our wet ingredients.
[candice] we have our coconut sugar which is my favourite sugar to bake with.
[candice] you could use whatever sugar you want but i really love the dark, caramel flavour
[candice] of the coconut sugar and kind of what it gives to the carrots, so that's what i'm using.
[candice] then we have some coconut oil, lots of coconut in this recipe actually.
[candice] i think i have a thing for coconut. what do you think?
[candice] keeping on the coconut theme, we have coconut yoghurt!
[candice] now you can use applesauce if you don't have coconut yoghurt.
[candice] i've done this with both and they both turn out really really nice.
[candice] it's just gives it like a nice, fluffy and moist like cakey texture.
[candice] it just makes the cake like nice and fluffy and moist, that's only reason why we're adding it
[candice] last but not least, we of course have our vanilla.
[candice] and we're just going to mix that together!
[candice] while our wet ingredients are mixing, we're going to add our dry so i just have some flour here.
[candice] this is organic all purpose flour.
[candice] if you have a gluten free flour that you love to use, you can use that but i'm not gluten free,
[candice] so i just cook regular, organic all purpose unbleached flour.
[candice] so i've added some ginger, cinnamon, pinch of salt or not.
[candice] if you just wanna stay there that's fine.
[candice] and of course our baking powder and baking soda.
[candice] just gonna mix that together and get rid of any lumps.
[candice] so once that's nice and smooth, we're going to add our dry to our wet.
[candice] and they can have a little magical party in there.
[candice] of cake mixing delight, or whatever.
[candice] and then it's not a cake party until the carrot shows up!
[candice] said no one ever.
[candice] but in this case, it's true!
[candice] i have a juicer and i juice every two days.
[candice] i keep the carrot pulp from my carrot juice to make carrot cake!
[candice] i know! so that's the pulp that i'm using. so you can grate the carrot or you can do what i do.
[candice] so we're going to fold in our carrot into our cake mixture,
[candice] and we're going to keep mixing again.
[candice] there's a lot of mixing in this recipe.
[candice] now we're going to add our batter to our greased pans.
[candice] mm! doesn't that look good?
[candice] and just like go in and spread it out.
[candice] probably could've gone with the smaller pan, just like 5 inch maybe instead of a 9 inch,
[candice] but i don't have that so that's why we're not doing that!
[candice] and again.
[candice] you could even put this just in one cake pan and then cut it in the centre if you want to make multi-layered.
[candice] but i never cut it straight, it always ends up on an angle, and then it's like lopsided cake failure.
[candice] so now we're going to throw these guys into the oven for about 25 to 30 minutes.
[candice] check them after 25 minutes, if a toothpick comes out clean, you're good to go.
[candice] if not, then put it back in for another 5 minutes
[candice] toss em in there.
[candice] gonna set my timer cos i always burn things.
[candice] come on..
[candice] 25!
[candice] now we can make our icing!
[candice] you could just totally skip this and just buy vegan cream cheese
[candice] and add some icing sugar and voila.
[candice] but if you don't wanna buy a premade cream cheese, you can just make it yourself.
[candice] so we have our confectioners sugar here, we're just going to add some vegan margarine/butter substitute.
[candice] i feel that in theory you could also do this with coconut oil.
[candice] i've just never done it with coconut oil but i mean you could try it, let me know how it goes.
[candice] we have some almond milk,
[candice] vanilla,
[candice] to get the cheesy flavour, we're going to add a little bit of salt.
[candice] some fresh lemon juice,
[candice] and some apple cider vinegar.
[candice] so mix that altogether in the stand mixer, or a hand mixer
[candice] or a bowl and a whisk if you're feeling ambitious.
[candice] woo!
[candice] you will end up with this beautiful frosting!
[candice] and then we're going to frost our cake!
[candice] let the cake cool. this is very important. sometimes i'm impatient and i know you're impatient.
[candice] and then you try and ice a warm cake.
[candice] and it's goopey, disgusting, sugary mess.
[candice] and i mean you could still eat it but it doesn't look good.
[candice] and it's easter! so you want to serve it to people, right?
[candice] now i'm just doing- i like a rustic looking cake so i'm doing four layers but minimal frosting.
[candice] this is just the centre, so i'm just doing like a quick frost.
[candice] there you have it guys! VEGAN CARROT CAKE with CREAM CHEESE FROSTING.

It is worth mentioning at this time that this is not a gluten free cake recipe. Grab your mixing bowl and get started by adding some coconut sugar, or if you prefer another sugar feel free to use that instead, this is your carrot cake after all. You will follow up your sugar by adding coconut oil and then some coconut yogurt. If you don't happen to have any coconut yogurt on hand you can use apple sauce as a substitute. This particular addition really gives the cake a nice fluffy texture, which is definitely a desirable trait in any carrot cake. After that you will add in your vanilla and mix well. Now that you have your wet ingredients mixing it's time to get your dry ingredients together. Candice has chosen an organic all purpose flour for her recipe. However, if you have dietary restrictions feel free to use the flour that suits you best. When you have the flour added mix in some ginger, cinnamon, baking powder, baking soda, and just a pinch of salt. You will whisk all those dry ingredients together thoroughly being sure to eliminate any lumps resulting in a smooth even mixture that you will pour directly into the mixing bowl that you started with. You should have all of your ingredients, both wet and dry, into your mixing bowl now. It's time to bring out the star of this cake party, the carrots. Candice juices on a pretty regular basis and has saved her carrot pulp which is what she's using for this vegan recipe, for those of you that do not juice religiously just grate a few carrots and you'll be in good shape. Add those carrots to the cake batter and keep mixing until you reach an even consistency. Your next step will be to add your carrot cake batter to two round greased baking pans. The size of the pan is really up to you but keep in mind you only have so much batter to go around. If you prefer you can simply put your batter into one single pan. Keep in mind however that you will, once cooked, have to cut your single cake in half. If you excel at cake cutting than this is a non-issue for you. However, most people end up cutting the cake slightly crooked and are left with the undesirable result of a crooked cake fail. Now take your cake pans, or pan if you decided to go with just one, and bake them for about 25 to 30 minutes. You will want to check them with a toothpick after 25 minutes, if it comes out clean you are good to go. If not, just put it back in for another 5 minutes. While those are baking you'll have plenty of time to get through the next phase of this vegan carrot cake concoction, the icing. If you want to take the easiest possible way to ice your cake you can simply buy some vegan cream cheese and add your desired amount of icing sugar to it. For those of you that are up to the challenge of making your own cream cheese let me assure you it is not a massive undertaking. You start with confectioner's sugar, add vegan margarine, almond milk, vanilla, a bit of salt, fresh lemon juice, and finally some apple cider vinegar. Mix all of this well and get ready to ice your cake. It is of the utmost importance that you let your carrot cake cool prior to frosting it. You will be tempted to frost it while it's still hot, but don't make that mistake. Let your cake cool properly and then frost it the way you think it should be frosted. Candice went all out with this one and actually did 4 layers, but 2 layers would still be an impressive effort.
