Who doesn't like a good Chicken Caesar Wrap, especially a Buffalo Chicken Caesar Wrap? Candice takes this classic wrap to a whole other dimension by making it a vegan wrap. This vegan recipe is not only a delicious alternative to the traditional Buffalo Chicken Caesar Wrap it's also a great way to embrace the 30 day vegan challenge this month. As you know chicken is not an approved vegan food, however there are many excellent alternatives one of which you can find right here on the Edgy Veg channel. Candice's recipe for Vegan Chicken Nuggets is a fine choice for the vegan chicken in your wrap, or you could use one of the many breaded vegan chicken patties sold at your favorite health food store. The important thing to remember here is that this is your wrap and it should taste every bit as good as you are hoping it will, so make your vegan chicken selection wisely. In addition to selecting your vegan chicken alternative the Vegan Buffalo Chicken Caesar Wrap recipe calls for a Caesar Salad. To make this just grab a decent sized mixing bowl and add a fair amount of your choice of lettuce. Romaine is the traditional go to lettuce for a Caesar Salad but you can use any lettuce you prefer. Keep in mind this is going in the wrap and will have a strong effect on the overall crunch factor. Candice has chosen to use Boston lettuce, which is a great fit for the wrap and packed with vitamins. Now that you have your lettuce situation figured out it's time to create and add your dressing. Whip that up and add it to the lettuce along with a smidge of parmesan cheese, or more than a smidge if that's your preference. Some of you may be saing to yourself right now "Wait a minute, I though parmesan cheese was off limits for vegans!". That is not entirely true. Imported parmesan cheese is off limits for sure as EU law actually states that it cannot be legally called parmesan cheese unless in contain 3 specific ingredients. Those ingredients are milk, salt and animal rennet. There are plenty of other parmesan cheese options that are vegan and can be found at your local health store, just check the label prior to purchase. Now that you have all the ingredients for your salad just mix them together until you have your lettuce evenly coated and then move that salad into another bowl. In your empty salad bowl that still contains some of your dressing you will add your vegan chicken. You have probably already cut that into strips but if not make sure to take that step before you add it to the empty salad bowl. In all reality it doesn't really matter how you cut your vegan chicken up, some people prefer cubes, some people prefer strips, theoretically you could cut them into the shape of little chicken dinosaurs. The point is that it doesn't matter how you decide to cut them up just be sure they are an appropriate size for the wrap. After putting your vegan chicken into the bowl add your desired amount of buffalo sauce into the bowl and mix up the vegan chicken being sure to get a nice even coating of the buffalo sauce on your vegan chicken pieces. This is a crucial part in the creation of your Vegan Buffalo Chicken Caesar Wrap and the sauce you use, along with it's level of spice, is going to vary from person to person. We are now ready to combine our ingredients together and finally create our Vegan Buffalo Chicken Caesar Wrap. Add your Caesar Salad to your tortilla forming a straight line down the middle. Scoop your vegan Buffalo Chicken out of your bowl and onto the Caesar Salad you just added to the tortilla, then fold it into a wrap. There are of course many different ways to go about folding your vegan wrap, Candice seems to have a good method you can see clearly in the video.
