Now that you know, following a Vegan diet is not at all boring; you can try this VEGAN Kulfi with cashews, seedless dates, cardamom powder and coconut milk. So indulge guilt free because this kulfi is absolutely dairy-free. VEGAN KULFI Ingredients ¼ cup cashew nuts 8-10 dates, deseeded 2 tbsps steel cut oats 2-3 green cardamoms seeds 1 cup thick coconut milk Method 1. Take cashew nuts in a small bowl. Add sufficient water and set aside for 3-4 hours. 2. Soak dates in sufficient water and set aside for 30 minutes. 3. Take oats and green cardamom seeds and blend to a fine powder. 4. Transfer the soaked cashew nuts in another blender jar. Add soaked dates and blend well. 5. In the same blender jar, add the prepared oats-green cardamom powder and coconut milk and blend till smooth and thick. 6. Transfer into a bowl and refrigerate for 1 hour. 7. Add the prepared mixture into individual moulds and cover with a lid. Freeze till set. 8. De-mould and serve immediately.
